1 1/2lbCouscous
8ozPeanuts; broken small
4ozRaisins
4ozDried cherries
1tbCinnamon
1/2tsGinger powder
1tsSaffron (soaked in water)

Prepare couscous in water according to package directions. In a large bowl add remaining ingredients to cooked couscous. If this is to be used as a side dish, rehaet mixture in 350 degree oven for 20 minutes. You can also use this top stuff eggplant, squash or tomatoes.
